Chocolate Chip Oatmeal Sandwich Cookies with Peanut Butter Filling

I had some peanut butter frosting left over from those peanut butter and jelly cupcakes I made last weekend.  I asked my husband what I should do with it.  He suggested I use it as a filling between chocolate chip oatmeal cookies. I knew right away it was a great idea, but I had no idea just how good these would be.


There's nothing new here.  These are both recipes you've seen before.  But let me tell you, when I first tasted one of these, I thought I had died and gone to heaven.  The combination of the peanut butter filling with these already delicious chewy cookies made me swoon.  I don't know if I've ever eaten a sandwich cookie this good in my life.  I took them into the office and the exclamations of yumminess kept coming all day.


You are definitely going to want to eat about a thousand of these ridiculous treatsies.  Your arteries will not thank you, admittedly, but your taste buds will be endlessly appreciative.  There seriously aren't words strong enough to describe how scrumptious these things are.  You just have to try them for yourself.  We've really outdone ourselves this time.

Margarita Cupcakes

Peanut Butter and Jelly Cupcakes

I was literally dancing with delight when I tasted this cupcake.  There were yummy sounds coming from all over the kitchen.  Unbelievably delightful.  These little treatsies start with a base of the moistest vanilla cake filled with a burst of raspberry jam, then generously topped with a thick creamy peanut butter frosting and hit with a bunch of rainbow sprinkles.

Cherry Jam Cookies

Sometimes in Taiwan, baking can be complicated.  You wake up in the morning thinking you'll try a new recipe for blondies.  Easy.  All you have to do is go to a specialty import shop and buy some condensed milk.  But then you get there, and they don't have condensed milk.  But the butter is already out softening on your counter.  What do you do?


Make cherry jam cookies of course.  I'm still trying to find ways to get rid of the cherry jam in my fridge, so these little beauties went into the oven.  They are light and golden with a hint of cherry red peeking through here and there, and the glitter of demerara sugar on the outside adds a bit of crunch.  Underneath the sweetness from the cherries is a punch of heat from ground ginger that warms up your mouth.  These are light and not overly sweet.  They'd be great with tea or coffee.  Luckily they're small because eating just one is nearly impossible.

Jumbo Chocolate Chip Cookies

They're enormous and beautiful and loaded with chocolate.  I've never seen such a beautiful chocolate chip cookie.  This recipe starts with 150 grams of melted butter and ends with over 300 grams of chocolate.  Your eyes will pop and your mouth will water.  You have to try one.

The good news?  They're so big you only have to eat one.  The better news?  The second one tastes just as good.  Be sure to have milk on hand.  It's a monster of deliciousness.  No kidding.  They're amazingly big.
